And now it's time for another installment of Warren's Freaking Easy Recipes. John made this tonight, and it was really excellent. I don't specify ingredient amounts. Just kind of make as much as you think you'll need. Also, you can use whatever Mexican food ingredients you want to fill them. Make lots and you can have leftovers to take to work.

This is an easy meal to make for a bunch of people if you make a couple baking dishes full.

I posted a different enchillada recipe in the past, but it was way too involved for my liking. This is much easier and just as tasty.

Easy Chicken Enchilladas

-several boneless skinless chicken breasts
-tortillas
-salsa
-jalepeno slices (dice them up)
-can of black beans
-shredded cheese
-diced olives
-diced onions
-can of enchillada sauce

Heat oven to 350 degrees or so.

Boil the chicken breasts for about 12 minutes or until done. Pull apart chicken with a fork to shred it.

Mix shredded chicken in bowl with salsa, jalepenos, black beans, olives, and onions.

Scoop chicken mixture into a tortilla. Put cheese on top of chicken mixture and wrap in tortilla. Put wrapped chicken tortilla in glass baking dish. Make several more wraps to fill the baking dish.

Pour enchillada sauce on top of tortillas.

Spread shredded cheese on top of enchillada sauce.

Bake 15 minutes or until cheese melts and contents are hot.

It's time for another easy recipe. I usually call this guacamole, but I'm not sure what goes into actual guacamole.

Super Easy Avocado Dip

2 soft avocadoes
2 roma tomatoes
several slices of onion

Peel, pit and mash the avocadoes with a fork.
Dice the tomatoes.
Dice the onion.
Mix.
Eat with tortilla chips or on tacos.

Mmmm....

This is the perfect amount for two or three people. I always just make small amounts at a time because it doesn't keep that well.

John and I thought we'd share some of our recipes from time to time. And when I post a recipe, you will know it's easy to make because I'm not fond of cooking.

I got this from a can of French's French Fried Onions. It's wonderfully easy. I'm cooking some right now, and it took me literally 10 minutes to prepare and throw in the oven. Some people like to add other stuff to this. But as far as simplicity is concerned, this particular recipe is one of the best.

Green Bean Casserole

3/4 cup milk
can of cream and mushroom soup
2 cans of green beans (drained)
1 1/3 cup of French's french fried onions

--Mix ingredients together in casserole dish except half of the french fried onions.
--Bake 30 minutes at 350 degrees or until hot. Stir.
--Top with rest of french fried onions and bake another 5 mintues or until onions are golden.

This makes a very small batch, good for two people. You could double this if you were serving it to more people as a side dish. John and I actually eat this as a main dish along with some Stove Top stuffing.

John and I thought we'd share some of our recipes from time to time since most of our friends are like us: young with tight budgets. And when I post a recipe, you will know it's easy to make because I'm not fond of cooking.

This morning I made John pancakes.

Freaking Easy Pancakes

2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon sugar
2 eggs
1 teaspoon vanilla
2 cups milk
pumpkin pie spice (or just cinnamon)

Mix together. Cook pancakes in a pan on medium heat with a little oil.
