Today John and I made up a bunch of breakfast burritos and froze them. We got the idea from The Simple Dollar.

The per-burrito cost was pretty low and they're pretty healthy (except for the tortilla probably, but that's okay). We made our own salsa with diced tomatoes, chopped onions, cilantro (from our plant), a jalepeno, thai hot peppers (from our plant), serranos (from our plant), and garlic (from a jar). I'm only counting the diced tomato and jalepeno cost in my analysis since the other stuff we already had and the cost per amount used was so minimal.

Tortillas - $2.19 x 3 packs = $6.57
Diced tomatoes - 67 cents x 2 cans = $1.34
Black beans - 88 cents x 2 cans = $1.76
Eggs - $1.50 x 2 dozens = $3
Shredded cheese - $1 x 2 bags = $2
Jalepeno - 15 cents?
Saran wrap - $2.39
Total = $17.21

We made 33 burritos.

Each burrito was about 52 cents.

It's actually less because we didn't use all the cheese or all the saran wrap. Here's hoping they reheat well.

I'm trying to have a more efficient kitchen that's well-stocked with stuff we can quickly make meals from. We want to make more and more from scratch using cheaper ingredients.

03-28-09canning

I canned chicken, pork, and pinto beans at a friend's house with her pressure canner. I'm hoping to buy my own canner soon. This stuff's already cooked - you just heat it up and eat it, or throw it into whatever meal you're making.

04-05-09jam

I found a farmer's market with strawberries for 50 cents a pound! So I made jam. This was my first attempt at water-bath canning (you just do it in a large pot). Buy a pack of fruit pectin and there are instructions in the box for making jam. It was so easy.

01-24-09granola

I got this granola recipe from my friend Megan. I just mix all the ingredients together, put it in this glass baking dish, bake for 2 hours. Very easy and tasty. I eat it with milk like cereal or put it in yogurt.
